White brined cheese is so delicious that can be enjoyed without any other side-dishes.

You can eat it with some red pepper on top and with a glass of red wine.

White cheese can be combined with almost all foodstuffs.

Shopska Salad

Ingredients:

  • 2 tomatoes
  • 1 cucumber
  • 3 raw or roasted peppers
  • onion
  • fresh parsley
  • grated or crumbled white cheese

Directions:

Wash and chop vegetables. Add grated or crumbled white cheese and flavour with sunflower or olive oil.

Ingredients:

  • 500 g. potatoes
  • 200 g. white cheese
  • 2 tablespoons of olive oil
  • a bunch of parsley

Directions:

Boil potatoes, peel them and divide in two bowls. Cut one part of potatoes into small pieces and mash the rest potatoes.

Mix them with the grated cheese, chopped parsley and olive oil.

Serve the salad garnished with pickle or without with the main dish.

Banitsa

Banitsa is a traditional Bulgarian pastry. It is made with homemade or readymade dough leaves with filling. It is baking in an oven.  The traditional filling is made of white brined cheese or cottage cheese with eggs. Filling can be also made of vegetables, meat, fruits.

Ingredients:

  • 250 ml. lukewarm water
  • 400  – 500 g. flour
  • 200 – 250 g. white brined cheese
  • 70 g. butter
  • 1 egg, pinch of salt, small amount of vinegar
  • sunflower oil

Directions:

Add salt in water, a small amount of vinegar and oil. Add the flour and make soft, but not sticky dough. Use it to make 16 balls and leave them in a baking dish for 30 – 40 min.

Grease bottom of the baking dish with butter and melt butter in a small saucepan. Crumble the cheese. Dip the balls in sunflower oil, then roll them out and put the leaves in the baking dish. Sprinkle cheese between every 3 dough leaves.

Bake it 30 min at 200 degrees. Brush with beaten egg on the fifteenth minute and continue baking. Pour evenly over the banitsa with water and leave it to soak for 5 min.

Ingredients:

  • a few slices of bread
  • 1 egg
  • 50 g. white brined cheese
  • a few drops of olive oil
  • cumin

Directions:

Break the egg into a bowl, add a few drops of olive oil and cumin and beat up. Add the crumbled white cheese and mix together. Mixture should be thick. Spread the mixture over each slice of bread and bake them in the oven or grill.

  • 3 – 4 eggs
  • ½ cup of sunflower oil
  • 1 cup of yoghurt
  • 2 cups of flour
  • 1 tsp of baking soda
  • 150 g. white brined cheese

Directions:

Beat up the eggs, add sunflower oil, yoghurt, baking soda and flour. Texture should be like a cake mix. Add crumbled cheese.

Adjust the oven to medium heat and bake until it is ready.

Ingredients:

  • 1 kg. flour
  • 600 ml. lukewarm water
  • 1 tbsp active dry yeast
  • a pinch of salt
  • 250 – 300 g. white brined cheese
  • 2 – 3 tsp of yoghurt
  • 2 – 3 eggs
  • 3 tsp flour
  • 125 g. butter

Directions:

Prepare dough with the products and leave it for half an hour. Add crumbled white cheese, eggs, yoghurt, flour. Prepare 2 – 3 dough leaves. Melt butter and grease the dough leaves, then add the filling. Roll them up and cut into pieces (width 3 – 4 cm.). Bake in moderate oven until it is ready.

Ingredients:

  • 300 g. white brined cheese
  • 1 tomato
  • onion
  • savory

Directions:

Cut the onion into crescents, the tomato into slices.Use two pieces of foil. Place the onion, then the cheese cut into medium thick slices, tomatoes and butter. Add savory and wrap in the foil. Place the cheese in baking dish. Preheat the oven to 250 degrees and bake.

Ingredients:

  • 6 red peppers
  • 200 g. or more white brined cheese
  • 1 egg
  • sunflower oil

Directions:

Cut off tops of the peppers and remove seeds. Crumble the cheese and mix with the egg. Stuff peppers with the mixture. Grease a baking dish with sunflower oil and place the peppers. Adjust the oven to medium heat and bake until it is ready.

Ingredients:

  • 5 eggs
  • 50 g. butter
  • 250 g. yoghurt
  • 75 g. white brined cheese
  • ½ tbsp. of vinegar
  • 1 clove of garlic
  • a pinch or red pepper
  • salt

Directions:

Add vinegar and salt to boiling water. Crack the eggs carefully into water. Boil until eggs are softly cooked. Mix crushed garlic, salt, grated white brined cheese and yoghurt. Divide mixture into equal portions. Place the eggs, sprinkle with red pepper. Spoon over the eggs with melted butter and serve immediately.

Ingredients:

  • a bunch of parsley
  • black pepper
  • salt
  • 250 g. white brined cheese
  • 10 eggs
  • 75 g. butter

Directions:

Crack the eggs into a bowl. Add a pinch of salt, crumbled white brined cheese, parsley, Stir the mixture, but not too much. Put about a tablespoon of butter into the frying pan and allow it to get hot enough to sizzle. Cook the eggs over a medium to low heat breaking them up with a wooden spoon. Sprinkle with black pepper.

  • 40 g. butter
  • red pepper
  • 5 eggs
  • 2 tomatoes
  • chilli peppers

Directions:

Desalt the cheese and cut it into 5 pieces. Place the pieces in a greased pot. Add slices of tomatoes and butter.

Adjust the oven to medium heat and bake. Add eggs, butter, chilli peppers, sprinkle with red pepper and continue baking.

Ingredients:

  • 700 g. tomatoes
  • flour (2 tsp)
  •  sunflower oil
  • red pepper
  • butter
  • salt and black pepper

Directions:

Heat the sunflower oil in a pan and add red pepper. Add the peeled and grated tomatoes. Pour some water, add salt and boil for 15 min. Mix with white brined cheese and butter, sprinkle with black pepper.

Ingredients:

  • 1 tsp of salt
  • 1 tbsp of savory
  • milk (600 ml.)
  • white brined cheese (100 g.)
  • butter (30 g.)
  • 5 potatoes

Directions:

Peel the potatoes, cut them into big pieces and boil. Strain the potatoes. Pour milk, add salt and savory and boil for a few minutes.

Serve the soup with crumbled cheese, cream and sprinkle with parsley. It is delicious with croutons.
