Banitsa

Banitsa is a traditional Bulgarian pastry. It is made with homemade or readymade dough leaves with filling. It is baking in an oven.  The traditional filling is made of white brined cheese or cottage cheese with eggs. Filling can be also made of vegetables, meat, fruits.

Ingredients:

  • 250 ml. lukewarm water
  • 400  – 500 g. flour
  • 200 – 250 g. white brined cheese
  • 70 g. butter
  • 1 egg, pinch of salt, small amount of vinegar
  • sunflower oil

Directions:

Add salt in water, a small amount of vinegar and oil. Add the flour and make soft, but not sticky dough. Use it to make 16 balls and leave them in a baking dish for 30 – 40 min.

Grease bottom of the baking dish with butter and melt butter in a small saucepan. Crumble the cheese. Dip the balls in sunflower oil, then roll them out and put the leaves in the baking dish. Sprinkle cheese between every 3 dough leaves.

Bake it 30 min at 200 degrees. Brush with beaten egg on the fifteenth minute and continue baking. Pour evenly over the banitsa with water and leave it to soak for 5 min.

Ingredients:

  • a few slices of bread
  • 1 egg
  • 50 g. white brined cheese
  • a few drops of olive oil
  • cumin

Directions:

Break the egg into a bowl, add a few drops of olive oil and cumin and beat up. Add the crumbled white cheese and mix together. Mixture should be thick. Spread the mixture over each slice of bread and bake them in the oven or grill.

Ingredients:

  • 3 – 4 eggs
  • ½ cup of sunflower oil
  • 1 cup of yoghurt
  • 2 cups of flour
  • 1 tsp of baking soda
  • 150 g. white brined cheese

Directions:

Beat up the eggs, add sunflower oil, yoghurt, baking soda and flour. Texture should be like a cake mix. Add crumbled cheese.

Adjust the oven to medium heat and bake until it is ready.

Ingredients:

  • 1 kg. flour
  • 600 ml. lukewarm water
  • 1 tbsp active dry yeast
  • a pinch of salt
  • 250 – 300 g. white brined cheese
  • 2 – 3 tsp of yoghurt
  • 2 – 3 eggs
  • 3 tsp flour
  • 125 g. butter

Directions:

Prepare dough with the products and leave it for half an hour. Add crumbled white cheese, eggs, yoghurt, flour. Prepare 2 – 3 dough leaves. Melt butter and grease the dough leaves, then add the filling. Roll them up and cut into pieces (width 3 – 4 cm.). Bake in moderate oven until it is ready.
